The recipe is quick and expert. I propose humid the diced potatoes in a pot while you saute the onions. That manner all the vegetables are cooked and just need to be seasoned with the onions. Plus you tin can use some of the reserved water from the potatoes in the mixture instead of the plainly water to go along from sticking.

We love Indian food, particularly the vegetarian dishes. Unfortunately, this recipe fell brusque. Nosotros institute it completely bland. However, we managed to save the dish by adding 1/4 cup of salsa, a pat of butter, extra salt & black pepper to it. Nosotros didn't have any in our pantry, just I assume canned tomatoes would've worked only likewise as the salsa.

If you're a curry fan, you lot're probably going to find this banal. I upped the spices chosen for but too browned some cumin seeds in the hot oil before adding the onion. I also added some Madras back-scratch powder for rut/flavor. I made this with leftover peas and baked spud from concluding nighttime's dinner, and used steamed cauliflower instead of carrots (I LOVE curried cauli). I rolled information technology upward in a paratha with a drizzle of garlic chutney. Nice lunch. Thanks!

This was a great accompinament to my favorite Indian Craven Curry and basmati rice dinner. The spices were only right and did not overpower my main dish at all. This dish would also stand lonely as a swell Indian Vegetarian Entree!

We cooked this for 45 minutes and the potatoes never cooked all the way through. Like others have said, the spices were okay, simply it needed a little more something. Perchance boil the diced potatoes in chicken stock first to melt them and add actress flavor at the same time? It would too add moistness, which would be a good matter since this was a piffling as well dry for my taste. Nosotros'll keep working on this i.

This mild dish was great for my family, because I honey Indian food, merely my kids don't. I did add a little fleck of butter mid-way through cooking to help with the tendency to stick to the pan. This was mild enough for them to swallow, and I just doctored mine with Sriracha chili sauce to spice it up more to my liking. I'll probably do this over again and tinker with variations of the blend of spices, because I actually would like it to exist a little more flavorful, simply information technology was a very fine starting time, and a simple recipe to make.
01/28/2008
I thought this was a picayune bland, simply my hubby loved it! He added hot sauce to information technology as well, so that may have influenced his taste.
06/16/2009
Skillful, just next time I brand information technology I will add more chili powder and some diced chiles to give information technology a chip more than boot.
12/28/2008
Loved this one. Be sure to dice the potatoes minor plenty that they cook through.
05/05/2009
Thanks MTORRES3. Quick and Piece of cake! I halved it. This goes cracking with a plainly baked chicken or turkey. Cook this to add together something to spice upward the a normal plain meal. Increase/decrease the spice to match your families taste. I served this to my wife and guests they all loved it.
01/08/2009
I added chopped cauliflower and used curry paste. Also boiled the potatos seperatly to ensure they were cooked. Added chicken broth as needed
04/nineteen/2011
Nice flavor but a bit banal. It needed more salt. All I could taste was frozen peas though fifty-fifty though my veggies were a skillful mix of potatoes, carrots, and peas. This went well with spiced rice and an indian style meatball in an onion raisin sauce. I'd set up it once again adding a fiddling more than spice or something to information technology as it was okay but needed a little doctoring to get in better.
02/24/2012
Good and not too powerful of flavour. I was afraid the chili powder was going to exist likewise much so I added one-half first but by the end of the dish, I concluded upward adding more than the 1 tsp. chosen for. It does need a bit more something but I could not effigy out what since I do not usually cook with Indian flavors. My husband and I did like this.
xi/22/2009
dainty flavour! was a striking!
04/22/2008
This was an easy recipe to make. I would make it a lilliputian spicier next fourth dimension. It took a lilliputian longer to melt than what the directions said. Tasty!
03/18/2011
Nifty. Piece of cake to prepare as long as you have the spices. Loved information technology. So did my wife.
08/26/2009
Dandy receipe. I fabricated it to go with baked craven wings and information technology was a big hit. Unfortunately I didn't have any carrots in the house so I substituted frozen corn. It really worked well. Anybody who ate information technology wanted to know how I found this receipe. Thank you for sharing with us.
01/28/2006
quick, simple and satisfying. i served this with yogurt mint sauce.
01/08/2008
Succulent! I've e'er loved Indian nutrient and have many favorites, but this takes the cake!

Easy dish to make, and was a lifesaver because it turned the final ingredients left in my fridge into a good for you, filling dish. Similar other commenters suggested, information technology was missing some season for my personal gustation (raised with a centre eastern palate). These were my modifications: -I boiled the potatoes while the onions were frying. -For the spices, I additionally threw in a teaspoon of cinnamon, black pepper and cayenne to taste, and more chili pulverisation and salt to sense of taste. -I added iii cloves of minced garlic afterwards frying the onions. -Once all the veggies were in (peas, carrots, potatoes, and spinach for the heck of it), I substituted 1/2 cup vegetable broth for h2o, threw in some leftover arrabbiata sauce (about 4 tablespoons; lycopersicon esculentum paste probably would have worked, too), and about a tablespoon of butter. Turned out delicious, and saved me and my swain from hunger earlier our next grocery shopping trip.
09/12/2013
Like others said, this was a trivial banal. I added some back-scratch, extra coriander, white pepper and a dash of garlic Tabasco for a kick. It came out dandy! The perfect side for my spicy Indian grilled chicken. I will definitely make this again!
06/12/2014
I add ane tin coconut milk instead of water. Soooooo yummy.
11/26/2007
I actually enjoyed this.
12/03/2010
Not spicy at all, and that's later on I doubled the spices.
07/23/2005
This recipe was excellent and very authentic. I did add a lilliputian more salt to taste. Will exist making this once more.
04/26/2014
wonderful used fresh peas and carrots
03/09/2008
I prepares this last night. I inverse a couple of things: I used iv red potatoes and iii.5 T of oil. Also, I used canned pea/carrot, and the carrots tore apart, but information technology withal looked good and tasted neat. thanks!
12/31/2005
i made this to complement the dearest/mustard curry chicken. it was pretty good. i wanted information technology to be more flossy, so while information technology was cooking, i added some milk, water, flour and butter. i put majorim, coriander, chile pulverization, a little curry powder, cumin, garlic powder - since one review warned it would be bland. the flour and water helped thicken it, and i added some cheese (cheddar, italian cheeses) in the final stage. information technology took so long for the potatoes to cook, that i somewhen dumped all the stuff from the skillet into a pot, covered information technology and cooked it for another x minutes. thats the merely fashion i could get the potatoes to soften up! the vvegetables ended upward being really adept, but i had to do a lot of things to alter the recipe to make information technology that style. i would make it once again - my way.
x/04/2015
Added foam cheese.
12/07/2016
very good. not to hot. I did increase the amount of spices. Intend to make this over again. Eager to substitute butternut squash for potatoes.
04/twenty/2014
Not bad, non thrilling. Nice variation for a vegetable side dish.
03/31/2016
Wonderfully fragile and simple recipe with a prissy residue of savory and sweet. I practice non agree with the other reviews near this being banal. However, I do retrieve that the recipe needs a point of description and ane alteration. The chili powder referred to in the recipe should be Indian chili powder and not American. BIG difference as far as spice level is concerned. Indian chili powder most closely resembles cayenne pepper if y'all you don't accept whatever. My alteration was calculation a lot more water- After calculation the veggies and coating with the spice sauté I filled the pot with water until it was nearly an inch beneath the top of the veggies. Then afterward the potatoes were cooked I smashed about half of them with a wooden spoon to create a thick velvety consistency to the dish. Soo yummy!

This dish was quick and easy to make. Great for walking abroad and doing other things while information technology cooks. I've cooked information technology twice, once with Lima beans since I didn't have any peas and the 2nd tims fourth dimension with peas. I adopt the Lima beans. I served information technology over tahdig rice.
08/07/2014
Even my kids liked this and they are ordinarily hesitant to effort new foods. We will make information technology over again for sure.
03/xviii/2021
I feel like made a lot of changes to this recipe but after reading some of the other reviews I guess that'south the norm. I didn't take frozen peas and carrots but I had fresh carrots so I used those and only omitted the peas. I used more carrots than the recipe chosen for in lodge to make up for not using the peas. I cut my carrots into approximately i/4 inch cubes and my potatoes into approximately 1/2 inch cubes. In addition to the spices chosen for I used a ane/2 tsp curry pulverisation and a one/four tsp black pepper. After calculation the potatoes and carrots to the pan I added a ane/2 cup h2o and a one/ii tsp of chicken flavored Better Than Bouillon. I covered the pan and cooked on low until the potatoes and carrots were tender. I didn't keep track of the exact amount of time but it was 40 minutes give or accept before the vegetables were tender enough. This dish was very mildly spicy and I felt that it was lacking a bit in season. If I make this again I might try doubling all the spices like other reviewers suggested.
08/02/2005
This was disappointing. Information technology had hardly any flavour. I had to add a lot of garam masala and some Goya Sazon seasoning to make it accept flavor, and even then it was bland. Also, i accidentally burnt it a fleck, but it didnt taste very bad from that. Had a very good taste with cucumber raita. I will make this over again, considering it seems like information technology has a lot of potential to be a skilful recipe. It kinda tasted like home fries.....
10/05/2017
Easy and proficient recipe. a couple of notes. non remotely spicy...i on a scale of 1 to 10. maybe the chili powder is the variable? I'm not certain why the recipe calls for "chili powder" and not curry powder just curry is more "authentically" an Indian spice. Yous can also add a trivial ginger and that adds another dimension also.
05/10/2019
Delicious and simple. Served with baked"Tanoor mode" chicken it was a wonderful dinner. I used chicken stock to loosen the vegetables a bit---needed close to 1/2 cup and everything was nice and tender. I make a lot of Indian nutrient, merely I will admit this was a little banal. I'm going to take some blame for that and replace my spices (which are quite onetime). I will try the dish with fresh spices and encounter if that livens it up a bit.
07/19/2017
Enjoyed this simple recipe as a side dish. Added craven goop to moisten, and the second time I made it I upped the spices by l% a definite Improvement!
06/08/2018
I used a one.five lb. handbag of fingerling potatoes, cutting larger fingerlings into fourths, and it worked fine. The potatoes were completely cooked in about twenty minutes. Delicious and full of flavor.
09/eighteen/2017
Bland and a little boring. I should accept waited to add peas at the end since they go puce colored and over cooked. Spices are a tad wearisome.
07/25/2009
I made this the other night and it was adept. But we don't like anything spicy so I contradistinct the spices to onions and garlic and seasoning such every bit that. The peas and carrots and potatoes blend then well together.
02/12/2007
This a recipe that is very delicious! Like shooting fish in a barrel and fast to brand. Simple ingredients. I make this all the time.
11/08/2017
Fantastic! I noticed the comments nigh the potatoes not cooking so I cut them a pretty pocket-size and cooked them for a while before adding the other veggies. It worked out perfectly. This is 1 dish I would expect to see at a restaurant and I was very impressed with how it turned out!
x/23/2014
5 stars with the changes I made. I added about 1/3 more of all the spices and an unmeasured corporeality of common salt to sense of taste... maybe an extra 1/3-i/2 teaspoon. We don't eat a lot of Indian food (will exist trying more)... and everyone loved it, including children. Thanks for a wonderful and piece of cake recipe. Past the way my potato dice was near 1/3" foursquare and it cooked in the allotted fourth dimension perfectly. Next time I will subtract potatoes and utilize more peas and carrots for more colour and nutrition. : )
04/07/2017
Will brand again. Used cayenne pepper (1/2 tsp) in identify of chili pulverization. Extra peas & carrots. Likewise added 1 T back-scratch powder
02/15/2014
Had to melt it for kids and then backed off the spice, however this gave it actually quite a apparently taste.
01/12/2012
And then easy so yummy. I followed the tip to slightly cook the potatoes before adding to the residual of the ingredients and it was indeed a practiced thing to do.
12/05/2020
Very easy and quick merely quite bland as written hence the 4 stars. We don't like super spicy but I doubled all the spices and it was delicious. I establish I actually had to watch the pan didn't go dry and probably added at least a 1/4 loving cup of water over the cooking time. We had it with butter chicken, basmati rice and hot naan from the oven. Will definitely make this once again. Thanks for the recipe!
03/12/2021
3.sixteen.21 ... Indian Carrots, Peas and Potatoes ... Usually, I read the first few helpfuls & so head to least positives. 'Not this fourth dimension, but I should have. This looked very expert, but it had very piffling flavor; close to flavorless.
07/25/2009
I made this the other dark and it was skillful. But we don't like anything spicy so I altered the spices to onions and garlic and seasoning such as that. The peas and carrots and potatoes alloy so well together.
06/23/2017
Try using ane.5 Tbsp of Curry seasoning mix (I like Trader Joe's best) instead of measuring out the individual spices - and butter instead of oil - very good stuff :)
01/17/2013
My rating is with additions, mostly incidental and because I had them. Included Anaheim chili pepper, diced, 3 raw carrots, sliced, more cumin and turmeric, some cabbage, plus a little Tabasco and some Louisiana "dressing" with the second and third bowl. That is a trivial like boudin sausage, for what information technology is worth. I put the carrots in the pan, followed by the chopped onion and added diced red potatoes and one white potato with skins on correct afterward, followed by the chili pepper. Cooked almost 25 minutes and proceeded to wonder about the reviews most the potatoes not cooking. This is slap-up, readily modified and pretty close to what I got used to while living in that location. Potato cube size didn't seem to be important. Frozen peas cooked separately and added at the end. Cabbage was added because it seemed a bit dry, and the cabbage was there. Keen matter about these recipes: like a good pair of boots, they will take y'all anywhere you want to go.

I ordinarily avoid onions for this recipe. Also, salt doesn't let the potatoes cook properly. I would propose adding cumin seeds and and so adding the veggies. Encompass the wok and let the veggies cook till potatoes are soft. Proceed stirring occasionally, then that veggies don't stick to the bottom. One time the potatoes are soft and tender; add salt, turmeric, and coriander powder. Stir the veggies so that each of them gets coated properly. Sprinkle some water and let it cook covered on a slow flame for about 5 minutes. After v minutes, remove from flame, give it a skillful stir, add garam masala and garnish it with coriander leaves. You may also add together red chili powder while adding the spices or yous can add together slit light-green chilies when cooking the veggies for a more spicy care for. I avert chilies as MIL can't have it
01/16/2017
I added frozen cauliflower, peas, carrots and it was Smashing!
05/14/2020
My family enjoys Indian food, so I was eager to try this recipe to come across if it would help me and my younger daughter decide that vegetables aren't yucky. Older daughter (veggie lover) really liked it and wants information technology again. Hubby (spice lover) wanted information technology to be hotter. It would be easy to add some chilies or chili paste. Younger daughter ate her veggies. Seriously! She ate them! (She besides complained almost the carrots, but never mind.) I thought that the veggies were very much improved past the curry and will be making this recipe again. The only reason I didn't requite it five stars is considering the spice mixture made the veggies feel gritty in our mouths and the veggies were a bit dry. Information technology was probably more the cook's error than the recipe's, but in the future I might add a piddling bit of Greek yogurt towards the end of cooking to requite it a smoother texture and more moisture.?
03/28/2017
Family loved it! I would add more than spices and flake more h2o but other than that it was delish!
04/27/2018
Recipe is piece of cake to prepare and very good. I did a taste test while cooking and added more of the spices (all of them). Melt the potatoes first before adding. My family enjoyed this over rice.
03/07/2010
This was a pretty good dish for our family unit. I enjoy Indian nutrient and my married woman and girl are much more picky. Information technology was like shooting fish in a barrel to make and tasted well--every bit noted in other reviews, take the time to melt the potatoes all the way through. It was a bit longer than what the recipe called for, simply my murphy cuts might accept been a bit larger than suggested.
01/28/2011
Pretty bland
04/xi/2010
okay... a piddling bland
